Tomato Zucchini Saute {Recipes}

Well, so much for getting caught up on stuff around here! Jacob caught a cold and then I did. So, the only thing I've been catching up on is couch time and Netflix.

We do still have to eat though. As a single mom who works, I'm all about fast, easy and healthy recipes. This is a dish that I like to make in the summer, especially if I have a bumper crop of tomatoes and zucchini. If you don't have home grown tomatoes, it's best to use cherry tomatoes because they're more sweet.

Tomato Zucchini Saute

2-3 small to medium zucchini - sliced
2-3 medium tomatoes cubed or about 2 Cups of cherry tomatoes halved
1 medium yellow onion
2 Tablespoons of olive oil
1/2 Cup of shredded Romano or parmesan cheese or as much as you like, to taste

Heat up a large skillet for a few minutes on medium high heat. Add the olive oil, onions and zucchini. Saute until the onions are golden brown and the zucchini are cooked, but still firm. Try not to over stir, so that you can get a nice golden brown color on the zucchini. Add the tomatoes and gently stir until they are warm. Top with the cheese and serve right away.

This is a quick and easy side dish that goes great with chicken or fish. We had ours with some grilled chicken and brown rice, and it was delicious.
